Paleo Pancakes

 

So simple and so delicious, these can be whipped up for the family in under 10 minutes. If you want to add extra nutritional value feel free to top with additional nuts, seeds and fruit.

Serves 4

Ingredients

  • 2 ripe bananas
  • 2 free-range or organic eggs
  • About 1/2 cup of blueberries/raspberries/blackberries
  • 1 dollop of Greek yoghurt
  • 2 tbsp of olive oil or coconut oil
  • 2 tbsp slivered almonds (optional)
  • 1 tsp honey (optional)

Method

  1. Mash bananas in a bowl.
  2. Add in eggs and blend together. Add desired amount of fruit to bowl. Combine.
  3. Spray pan with oil, pour in batter and heat on medium. Make sure to watch your pancakes. Cooking paleo pancakes requires patience and if you cook them on too high a setting, they will burn.
  4. Once they are golden on one side, flip over and cook until both sides are cooked through.
  5. If you wish top with almonds, Greek yoghurt, honey and any leftover fruit.
